Est!Est!!Est!!!: the story behind the appellation’s bizzare name:
Upon research, precise details have proven to be a little fuzzy, so I’ve included all variations I found of the story! So, according to legend(s): in the 11th century/12th century German/Flemish noble/bishop – possibly named Johan DeFugger, but most certainly a lover of good wine – sent his servant Martinus/Martino to towns ahead of their journey to sample and rate the local wines. The wine scout was instructed to write EST! (supposedly short for ‘vinum est bonum’ or ‘there’s good wine here’) on the door of every inn/gate of every town for a good wine, or EST!EST!! for every excellent wine. The wine from the town of Montefiascone proved to be so outstanding that Martinus/Martino noted EST!EST!!EST!!!
The appellation EST!EST!!EST!!! is located in the far northern part of the region of Lazio (where Rome is located) by lake Bolsena.
the winery
This 3rd generation family owned winery is operated by Roberto Trappolini. It was established in the 1960’s by his grandfather and then run by his father, where bulk production was the primary focus. Today, Trappolini no longer produces wine in bulk, rather they focus on quality red and white wines crafted from local grapes.
tasting notes:
Green apple and peach, with hints of almonds, honey blossom & flint, with a dry and mouthwatering minerally finish. Enjoy as an apertif or pair with seafood, goat or sheep cheeses & salads with a citrusy note.
